Rice and Peas

Ingredients

25 milliliter vegetable oil

1 dimensionless onion

145 gram long grain rice

200 milliliter water

200 milliliter coconut milk
-
200 gram kidney beans, rinsed and drained

1 tablespoon fresh thyme, finely chopped

0.5 handful fresh coriander
Method
- Heat the oil in a frying pan and fry the onion until translucent.
- Add the rice, stir well and add the water and coconut milk. Season with salt and black pepper. Bring to the boil.
- Add the kidney beans and thyme, simmer, and cover, for about 20 minutes until the rice is cooked.
- Serve garnished with the coriander.
