- Mary Berry wellington is also cooked in advance and then fully cooled. MB says Wellington made with 1.5 kg 'beef fillet' serves 8. 1.125 should serve 6.
- Ask for 1.1 kg beef tenderloin/ beef fillet at the butcher's (approx 2.5 lb), ask for it to be trussed

Duck pie
Notes
- Add carrots and leeks 20 minutes later than in the recipe. After removing the duck from the pan, increase the heat and reduce by 1/3 before re-adding the duck meat. This should address the finished pie filling coming out too loose.
